I have extensive background in new product development, menu design, cost control, food cost, margin erosion, procurement, standard operating procedure, process flow and efficiencies. After spending the last 16 years in Ireland’s leading food company, I have first-hand experience in growing a company while maintaining quality, brand values and reducing costs.
It is essential that a business owner and chef knows and understands the fundamentals of plate cost, food cost percentage and food cost formula. In terms of profitability, knowing your costs could make the difference between your business becoming one that fails or one that grows from strength to strength.
The goals are to control excessive costs for food and to ensure that a business will operate at a profit, be viable, sustainable and be able to grow!
