With over 30 years’ experience both national and international, Niall is best known for his work as head of food at the award-winning food company The Butler’s Pantry. Over the last 16 years Niall has won numerous awards including the Great Taste Awards, Small Business Award and Blas na hEireann, and has a MSc in Applied Culinary Nutrition. Niall has been a regular contributor to Food & Wine magazine, TV3, and is a guest chef for Miele.

I have extensive background in new product development, menu design, cost control, food cost, margin erosion, procurement, standard operating procedure, process flow and efficiencies. After spending the last 16 years in Ireland’s leading food company, I have first-hand experience in growing a company while maintaining quality, brand values and reducing costs.

In terms of profitability, knowing your costs could make the difference between your business becoming one that fails or one that grows from strength to strength.

The goals are to control excessive costs for food and to ensure that a business will operate at a profit, be viable, sustainable and be able to grow!

Demonstrations

Niall is a hugely experienced chef who has been teaching his craft for more than a decade. Niall conducts cookery demonstrations in Miele, Cooks Academy and Taste of Dublin. His passion for food and cooking is utterly infectious and is driven by the quality of seasonal Irish ingredients. Niall loves nothing more than passing on his knowledge.
